Homemade Hamburger Helper is a quick and comforting dish that’s perfect for busy weeknights. Ground beef, onions, elbow macaroni, and a rich blend of spices come together to make a cheesy, hearty meal the whole family will enjoy. This homemade version is just as delicious as the boxed kind, but made with fresh, flavorful ingredients.
Ingredients
- 1 pound extra lean ground beef
- 1/2 medium onion, chopped
- 2 heaping tablespoons tomato paste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 3 cups beef broth
- 1 cup uncooked elbow macaroni
- 2 cups freshly grated cheddar cheese
- Salt & pepper to taste
Instructions

Brown the Beef and Onions:
Add the ground beef and chopped onions to a soup pot. Cook over medium-high heat until the beef has browned, about 7-10 minutes. Break up the meat with a spoon as you go along. If there’s a lot of excess fat, spoon most of it out. -
Add Spices:
Stir in the tomato paste, garlic powder, and chili powder. Mix well to combine. -
Add Broth and Macaroni:
Pour in the beef broth and increase the heat to high. Once the mixture starts boiling, add in the uncooked macaroni. Reduce the heat to a simmer (not a rapid boil), and let it cook uncovered until the pasta is tender and most of the liquid has been absorbed, about 13-15 minutes. Stir every couple of minutes to prevent sticking. -
Add Cheese:
While the pasta is cooking, grate the cheese. Once the pasta is tender and most of the liquid has been absorbed, take the pot off the heat. Stir in the freshly grated cheddar cheese until melted and combined. Season with salt and pepper to taste. -
Rest and Serve:
Let the dish sit for a couple of minutes before serving, but it can be served immediately if desired.
Notes
- Serving Size: This recipe serves 4-6, depending on the portion size.
- Liquid Adjustments: As with any one-pot meal, cooking times and stove temperatures vary. If you run out of liquid before the pasta is fully cooked, add more liquid (1/2 cup at a time) until the pasta is done.
