- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup chopped pistachios
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
- Press the mixture into the bottom and up the sides of tartlet pans.
- Bake for 8-10 minutes, or until lightly golden brown. Let cool completely.
- In a small saucepan, heat the raspberry jam until melted. Remove from heat and set aside.
- In a medium bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
- Spread a layer of the mascarpone mixture into each tartlet crust.
- Top with fresh raspberries and chopped pistachios.
- Drizzle with the melted raspberry jam.
- Refrigerate for at least 1 hour before serving.
