  • 1 cup green lentils, rinsed
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • Salt and pepper, to taste

Instructions

  • In a large pot, sauté the onion, carrots, celery, and garlic over medium heat until softened, about 5-7 minutes.
  • Add the lentils, vegetable broth, diced tomatoes, cumin, paprika, salt, and pepper. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat and let it simmer, uncovered, for 30 minutes, or until the lentils are tender and cooked through.
  • Taste and adjust seasonings as necessary. Serve hot and enjoy!

Notes

  • If you prefer a thicker soup, you can mash a portion of the lentils once they’re cooked, or use an immersion blender to blend part of the soup to your desired consistency.
  • You can store leftovers in the refrigerator for up to 5 days, or freeze for up to 3 months.
