Description

Hearty Cowboy Casserole is a delicious and easy one-pot meal made with ground beef, black beans, corn, bell peppers, and diced tomatoes. This slow-cooked dish is packed with flavor and can be served with optional toppings like shredded cheese or fresh cilantro for added flair.

Ingredients

Scale
  • 1 lb ground beef
  • 1 can black beans (15 oz), drained
  • 1 can corn (15 oz), drained
  • 2 bell peppers, chopped
  • 1 can diced tomatoes (14.5 oz), undrained
  • 2 tbsp taco seasoning

Instructions

  • Brown the Beef:
In a skillet over medium heat, brown the ground beef. Drain any excess fat.

  • Transfer to Slow Cooker:
Transfer the cooked beef to a slow cooker. Add the black beans, corn, chopped bell peppers, and diced tomatoes (undrained).

  • Add Seasonings:
Sprinkle the taco seasoning over the mixture and stir well to combine.

  • Cook:
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until heated through.

  • Serve:
Serve hot with optional toppings like shredded cheese or fresh cilantro.

Notes

  • You can also add a dollop of sour cream or a squeeze of lime for extra flavor.
  • For a spicier version, add jalapeños or use a spicy taco seasoning.
  • If you prefer a quicker method, cook the casserole in a stovetop pot over medium heat for 20-25 minutes instead of using a slow cooker.
