These delicate heart-shaped strawberry shortbread cookies are the perfect treat for any occasion. The buttery shortbread pairs wonderfully with a sweet strawberry filling and glaze, making them both delicious and visually stunning.

For the Basic Shortbread

  • 125 g unsalted butter, room temperature
  • 60 g caster sugar
  • 1 teaspoon vanilla extract
  • 180 g plain flour (all-purpose)
  • ¼ teaspoon fine salt

For the Strawberry Filling and Glaze

  • 110 g powdered icing sugar (confectioners’ sugar)
  • 2 tablespoons strawberry puree (2 large strawberries hulled and mashed with a fork)
  • 1 teaspoon unsalted butter, melted
  • 30 ml milk
  • 170 g strawberry jam

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, beat the softened unsalted butter and caster sugar together until light and fluffy.
  • Add the vanilla extract and mix until combined.
  • Gradually sift in the plain flour and fine salt, mixing until the dough comes together. If the dough feels too crumbly, add a small amount of milk (1 tablespoon at a time) until it comes together.
  • Turn the dough out onto a lightly floured surface and roll it out to about ¼ inch thickness.
  • Using a heart-shaped cookie cutter, cut out cookies and place them on the prepared baking sheet.
  • Bake for 10-12 minutes or until the edges are lightly golden. Let the cookies cool completely on a wire rack.
  • While the cookies are cooling, prepare the strawberry filling and glaze. In a small bowl, whisk together the powdered icing sugar, strawberry puree, melted unsalted butter, and milk until smooth.
  • Spread a layer of strawberry jam on the bottom of half of the cookies.
  • Spoon or pipe the strawberry filling onto the other half of the cookies, and sandwich the jam-covered cookies together with the filled cookies.
  • If desired, drizzle the glaze over the top of the cookies for an extra touch of sweetness.
  • Let the glaze set before serving.
  • Serve and enjoy!

Notes

  • You can adjust the sweetness of the strawberry filling by adding more or less icing sugar.
  • These cookies are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
  • For a more intense strawberry flavor, try using homemade strawberry jam or a jam with fewer additives.
