Description
A lighter take on the classic broccoli cheddar soup, featuring fresh vegetables, low-fat cottage cheese, and just a touch of cheddar for flavor. This healthy version is creamy, flavorful, and perfect for a nutritious meal.

- 1 tablespoon butter
- 1 large yellow onion, diced
- 2 large carrots, peeled and diced
- 1 stalk celery, diced
- 2 cloves garlic, minced
- ¼ cup all-purpose flour (or gluten-free flour)
- ½ teaspoon smoked paprika
- 3 cups vegetable broth (preferably not-chicken style)
- 4 cups chopped broccoli
- 2 cups 1% milk
- 4 oz cheddar cheese, shredded (about 1 cup)
- 1 cup low-fat cottage cheese, blended
- Salt and pepper, to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion, carrots, and celery, and sauté for 5-7 minutes until the vegetables are tender.
- Add the minced garlic and smoked paprika, and cook for another 1 minute until fragrant.
- Stir in the flour and cook for 2 minutes, creating a roux.
- Gradually add the vegetable broth while stirring constantly to avoid lumps. Once incorporated, add the chopped broccoli.
- Bring the soup to a simmer and cook for 8-10 minutes until the broccoli is tender.
- Add the 1% milk, shredded cheddar cheese, and blended low-fat cottage cheese. Stir until the cheese is melted and the soup is creamy.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
- If you prefer a smoother texture, you can blend part or all of the soup using an immersion blender or regular blender.
- For a richer flavor, you can add a bit more cheese, but it may change the nutrition.
- For a dairy-free version, you can substitute the milk and cheese with non-dairy alternatives.
