Ingredients
- 1 lb ground beef
- 3 medium potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper, to taste
- 1/4 cup beef broth or water (optional)
- Chopped green onions for garnish
Instructions

Heat Olive Oil:
Heat olive oil in a large skillet or Dutch oven over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until fragrant. -
Cook the Ground Beef:
Add the ground beef to the skillet and cook until browned, about 5-7 minutes, breaking it up into crumbles as it cooks. -
Add Vegetables and Seasoning:
Stir in the diced potatoes and red bell pepper. Season with paprika, cumin, salt, and pepper. If needed, add beef broth or water to help the potatoes cook. Cover the skillet and simmer for 15-20 minutes, or until the potatoes are tender. -
Finish Cooking:
After simmering, remove the lid and cook for a few more minutes if needed to remove excess moisture. Taste and adjust seasoning as desired. -
Garnish and Serve:
Garnish with chopped green onions before serving.
