- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 tbsp lime juice
- Salt and pepper, to taste
Instructions
- Preheat your grill to medium-high heat.
- In a small bowl, mix olive oil, lemon juice, garlic powder, smoked paprika, salt, and pepper.
- Rub the salmon fillets with the olive oil mixture.
- Place the salmon fillets on the grill and cook for about 4-5 minutes per side, or until cooked through and the internal temperature reaches 145°F.
- While the salmon is grilling, prepare the avocado salsa by combining the diced avocados, halved cherry tomatoes, chopped red onion, cilantro, lime juice, salt, and pepper in a bowl. Mix gently to combine.
- Once the salmon is cooked, remove it from the grill and serve with a generous spoonful of avocado salsa on top.
