For the Grilled Salmon:

  • 4 salmon fillets (6 oz each)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper, to taste

For the Avocado Salsa:

  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp lime juice
  • Salt and pepper, to taste

Instructions

  • Preheat your grill to medium-high heat.
  • In a small bowl, mix olive oil, lemon juice, garlic powder, smoked paprika, salt, and pepper.
  • Rub the salmon fillets with the olive oil mixture.
  • Place the salmon fillets on the grill and cook for about 4-5 minutes per side, or until cooked through and the internal temperature reaches 145°F.
  • While the salmon is grilling, prepare the avocado salsa by combining the diced avocados, halved cherry tomatoes, chopped red onion, cilantro, lime juice, salt, and pepper in a bowl. Mix gently to combine.
  • Once the salmon is cooked, remove it from the grill and serve with a generous spoonful of avocado salsa on top.

Notes

  • For extra flavor, marinate the salmon fillets in the olive oil mixture for 15-30 minutes before grilling.
  • You can substitute the salmon with other fish such as trout or tilapia if preferred.
