  • 1 cup pecans
  • 1 tsp curry powder
  • 1/4 cup honey
  • 1/4 cup olive oil
  • 2 tbsp white wine vinegar
  • Salt and pepper to taste

Instructions

  • Preheat grill to medium-high heat.
  • Toss peaches on the grill until grill marks appear, about 3-4 minutes per side.
  • In a small bowl, mix pecans with curry powder and honey until coated.
  • Place pecans on a baking sheet and roast in the oven at 350°F for 10 minutes.
  • In a separate bowl, whisk together olive oil, white wine vinegar, salt, and pepper to make the vinaigrette.
