Ingredients
-
For the Cake:
-
1 cup all-purpose flour (or gluten-free flour blend for a gluten-free option)
-
1 ½ teaspoons baking powder
-
¼ teaspoon salt
-
½ teaspoon ground cinnamon
-
1 teaspoon orange zest
-
¾ cup butter (or dairy-free butter)
-
¾ cup white sugar
-
3 large eggs
-
¼ cup milk
-
1 cup chopped walnuts
For the Honey Syrup:
-
1 cup white sugar
-
1 cup honey
-
¾ cup water
-
1 teaspoon lemon juice
-
Instructions
-
Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
-
Make the cake: In a medium bowl, whisk together the all-purpose flour, baking powder, salt, ground cinnamon, and orange zest.
-
In a separate large bowl, cream the butter and white sugar together until light and fluffy.
-
Beat in the eggs one at a time, mixing well after each addition. Add the milk and continue to mix until fully combined.
-
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
-
Gently fold in the chopped walnuts.
-
Pour the batter into the prepared cake pan and smooth the top.
-
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
-
Make the honey syrup: While the cake is baking, combine the white sugar, honey, water, and lemon juice in a small saucepan. Bring to a simmer over medium heat, stirring occasionally, until the sugar dissolves and the syrup thickens slightly, about 5-7 minutes. Remove from heat.
-
When the cake is done baking, remove it from the oven and allow it to cool for about 10 minutes.
-
Soak the cake: Once the cake has cooled slightly, pour the warm honey syrup over the cake, ensuring it soaks into the entire surface.
-
Allow the cake to cool completely, absorbing the syrup, before slicing and serving.
Notes
-
This cake can be made a day in advance, as the flavors improve as it sits.
-
You can substitute the walnuts with other nuts, like almonds or pistachios, if desired.
-
For a dairy-free version, use plant-based butter and milk.
