- 1 cucumber, diced (optional)
- 1 cup cherry tomatoes, halved (optional)
- 1/2 cup feta cheese, crumbled (optional)
- 1/4 cup Kalamata olives, sliced (optional)
- 1/4 cup red onion, thinly sliced (optional)
- 1/4 cup Greek dressing (store-bought or homemade)
Instructions
- Cook orzo pasta according to package instructions. Drain and set aside to cool.
- Season chicken breasts with salt and black pepper. Grill or cook in a skillet over medium heat for 6-7 minutes per side, or until fully cooked through. Let cool, then chop into bite-sized pieces.
- In a large bowl, combine the cooked orzo, chopped chicken, and any additional desired ingredients (cucumbers, tomatoes, feta, olives, red onion).
- Toss everything together with Greek dressing until evenly coated.
- Serve chilled and enjoy!
