  • Total Time: 35 minutes
  • Yield: 24 cookies 1x

Description

These Gingerbread Snowballs are the perfect holiday treat, combining warm spices and rich butter in a melt-in-your-mouth cookie. Coated in powdered sugar for that “snowy” finish, they’re a festive addition to your Christmas cookie tray. With the irresistible flavors of ginger, cinnamon, and nutmeg, these snowballs will fill your home with the aroma of the season.

Ingredients

Scale
  • 1 cup butter, softened
  • ½ cup powdered sugar (plus extra for coating)
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ¼ tsp salt
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ½ cup chopped pecans

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, cream together the butter and powdered sugar until light and fluffy.
  • Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, salt, ginger, cinnamon, cloves, and nutmeg.
  • Gradually add the dry ingredients to the creamed butter mixture, mixing until just combined.
  • Fold in the chopped pecans.
  • Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  • Bake for 15–20 minutes, or until the cookies are set but not browned.
  • Let the cookies cool slightly, then roll them in additional powdered sugar until coated.

Notes

  • For an extra burst of flavor, you can toast the pecans before adding them to the dough to enhance their richness.
  • These cookies are delicate, so let them cool slightly before handling to avoid breaking.
  • Store them in an airtight container at room temperature for up to a week, or freeze them for up to a month.
  • You can also roll the dough balls in a mixture of powdered sugar and a pinch of cinnamon for added flavor.
