  • 2 large Eggs

For the Cream Cheese Frosting:

  • 1/2 cup Butter (1 stick, softened)
  • 1 (8-ounce) pkg. Cream Cheese (softened)
  • 3 3/4 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract

For Garnish:

  • 1 to 1 1/2 lbs. Fresh Strawberries, sliced

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, beat the cold butter and sugar together until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Scoop spoonfuls of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  • Flatten each cookie slightly with the back of a spoon or your hand.
  • Bake for 10-12 minutes or until the edges are golden brown. Allow the cookies to cool completely on a wire rack.
  • While the cookies are cooling, make the frosting: beat the softened butter and cream cheese together until smooth and creamy.
  • Gradually add the powdered sugar, 1 cup at a time, until the frosting is fluffy and smooth. Stir in the vanilla extract.
  • Once the cookies are completely cooled, frost each cookie generously with the cream cheese frosting.
  • Top with fresh strawberry slices and serve.
