Scale
For the Cookies:
- 1 cup Butter (cold and cut into small cubes)
- 2 cups Sugar
- 2 large Eggs
- 2 teaspoons Vanilla Extract
- 3 cups Flour
- 1 1/4 teaspoons Baking Powder
- 1/4 teaspoon Baking Soda
- 1/2 teaspoon Salt
For the Cream Cheese Frosting:
- 1/2 cup Butter (1 stick, softened)
- 1 (8-ounce) pkg. Cream Cheese (softened)
- 3 3/4 cups Powdered Sugar
- 1 teaspoon Vanilla Extract
For Garnish:
- 1 to 1 1/2 lbs. Fresh Strawberries, sliced
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat the cold butter and sugar together until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop spoonfuls of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each cookie slightly with the back of a spoon or your hand.
- Bake for 10-12 minutes or until the edges are golden brown. Allow the cookies to cool completely on a wire rack.
- While the cookies are cooling, make the frosting: beat the softened butter and cream cheese together until smooth and creamy.
- Gradually add the powdered sugar, 1 cup at a time, until the frosting is fluffy and smooth. Stir in the vanilla extract.
- Once the cookies are completely cooled, frost each cookie generously with the cream cheese frosting.
- Top with fresh strawberry slices and serve.
Notes
- For best results, chill the dough for 30 minutes before baking.
- You can store the cookies in an airtight container for up to 3 days at room temperature or refrigerate for a longer shelf life.
- Use ripe, sweet strawberries for the best flavor and texture.
