Description

This hearty and flavorful casserole layers crunchy Fritos, seasoned ground beef, cheese, and a blend of beans, corn, and tomatoes for a taco-inspired dish the whole family will love. It’s perfect for a quick weeknight dinner or a crowd-pleasing meal.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 can corn
  • 1 can black beans
  • 1 bag Fritos
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, salsa, avocado

Instructions

  • Preheat oven to 350°F.
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning, diced tomatoes, corn, and black beans to the skillet. Stir to combine.
  • In a baking dish, layer half of the Fritos on the bottom.
  • Top with half of the meat mixture and half of the shredded cheese.
  • Repeat the layers with the remaining Fritos, meat mixture, and cheese.
  • Bake in the preheated oven for 15-20 minutes, until cheese is melted and bubbly.
  • Serve with optional toppings and enjoy!

Notes

  • You can use ground turkey or chicken instead of beef for a leaner option.
  • For added flavor, sprinkle some jalapeños or green onions on top before baking.
