Ingredients

  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/8 tsp salt
  • 1 cup almond milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 2 tbsp vegetable oil

Instructions

  • Mix Dry Ingredients: In a mixing bowl, combine flour, sugar, baking powder, and salt.
  • Mix Wet Ingredients: In a separate bowl, mix almond milk, apple cider vinegar, and vanilla extract.
  • Combine Wet and Dry: Add wet ingredients to dry ingredients and mix until just combined. Be careful not to overmix; it’s okay if the batter is slightly lumpy.
  • Heat the Pan: Heat vegetable oil in a pan over medium heat.
  • Cook the Pancakes: Pour ¼ cup of batter onto the pan for each pancake.
  • Flip: Cook until bubbles form on the surface, then flip and cook for another minute until golden brown.
  • Serve: Serve hot with your favorite toppings.

Notes

  • For fluffier pancakes, do not overmix the batter.
  • You can substitute almond milk with any other plant-based milk, such as oat or soy milk.
