Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the beaten eggs and scramble them in the pan until fully cooked. Remove them from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil and heat over medium-high.
- Add the chopped green onion and sauté for 1-2 minutes until fragrant and softened.
- Add the cold, day-old rice to the skillet, breaking up any clumps with a spatula.
- Stir in the soy sauce and sesame oil, ensuring the rice is evenly coated with the sauce.
- Return the cooked eggs to the skillet and toss everything together until well combined and heated through.
- Serve immediately as a side dish or enjoy as a main meal.
