- ¼ cup yellow cornmeal
- 15 ounces canned salmon
- 1 red bell pepper, finely chopped
- ½ cup sweet onion, diced
- 1 large egg, beaten
- 1 teaspoon Worcestershire sauce
- ½ teaspoon seasoned salt
- ¼ teaspoon pepper
- ½ teaspoon garlic powder
- ¼ cup mayonnaise
- ¼ cup cilantro, chopped
- Olive oil for frying
Instructions
- In a large mixing bowl, combine the flour, cornmeal, seasoned salt, pepper, and garlic powder.
- Add the canned salmon (drained and flaked), chopped red bell pepper, sweet onion, cilantro, and mayonnaise. Stir to combine.
- Stir in the beaten egg and Worcestershire sauce to the mixture until everything is evenly incorporated.
- Shape the mixture into small patties, about 1 ½ inches in diameter.
- Heat a generous amount of olive oil in a skillet over medium-high heat.
- Once the oil is hot, carefully add the patties to the skillet, frying in batches if necessary.
- Cook for 3-4 minutes per side, or until golden brown and crispy.
- Remove from the skillet and drain on paper towels.
- Serve hot with your favorite dipping sauce or side dish.
Notes
- You can use fresh salmon if you prefer, just cook and flake it before mixing it into the patty mixture.
- If you don’t have cilantro, you can substitute with parsley or omit it entirely.
- To make it spicier, feel free to add a pinch of cayenne pepper or your favorite hot sauce to the mix.
