  • Total Time: 20-22 minutes
  • Yield: 4 servings 1x

Description

A simple, flavorful side dish, these sautéed mushrooms with spinach are quick to prepare and packed with savory goodness. With a dash of garlic, thyme, and optional balsamic vinegar and butter, this dish is the perfect complement to any meal.

Ingredients

Scale
  • 2 cups fresh mushrooms (sliced)
  • 2 cups fresh spinach (washed and chopped)
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme (or fresh thyme, optional)
  • 1 tablespoon butter (optional)
  • 1 tablespoon balsamic vinegar (optional)
  • Fresh parsley (chopped, for garnish)

Instructions

  • Prepare the Vegetables:
Clean and slice the mushrooms. Wash and chop the spinach.

  • Sauté the Mushrooms:
Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes, stirring occasionally, until they release their moisture and begin to brown.

  • Add Garlic and Spinach:
Add the minced garlic to the skillet and sauté for another 1 minute until fragrant. Then, add the spinach and cook for 2-3 minutes, stirring occasionally, until the spinach wilts.

  • Season the Dish:
Season with salt, pepper, and thyme (if using). Stir in the butter and balsamic vinegar, if using, and continue cooking for one more minute to combine the flavors.

  • Serve:
Transfer to a serving dish and garnish with fresh parsley. Serve immediately.

Notes

  • Ingredient Notes:
    • You can use either dried or fresh thyme for added flavor, but fresh will give a more vibrant taste.
    • For extra richness, add butter; balsamic vinegar adds a slight tangy sweetness.
  • Recipe Tips:
    • Be sure to cook the mushrooms until they release their moisture and brown, as this develops deeper flavors.
    • If using fresh thyme, double the amount for a more aromatic dish.
