Description

These easy Chocolate Chip Flapjacks are a delicious, chewy treat made with a combination of porridge and rolled oats, golden syrup, and the sweet addition of chocolate chips. Perfect for a quick snack or dessert, they’re simple to make and ideal for satisfying your sweet tooth!

Ingredients

Scale
  • 125g unsalted butter
  • 55g soft brown sugar
  • 125g golden syrup
  • 110g porridge oats
  • 110g rolled oats
  • 80g chocolate chips

Instructions

  • Preheat the oven: Preheat the oven to 160°C (fan), 180°C (conventional), or 320°F (convection), 356°F (standard).
  • Prepare the tin: Line a 20 cm x 20 cm (8-inch x 8-inch) baking tin with baking paper.
  • Melt the butter mixture: In a saucepan, melt the butter, soft brown sugar, and golden syrup over medium heat, stirring occasionally.
  • Boil the mixture: Once the mixture has melted, bring it to a gentle boil and let it boil for about 30 seconds, then remove from heat.
  • Mix in the oats: Stir in the porridge oats and rolled oats, mixing until everything is well combined.
  • Transfer to the tin: Pour the mixture into the prepared tin and press it down firmly.
  • Add chocolate chips: Sprinkle the chocolate chips on top, pressing them down lightly into the mixture.
  • Bake: Bake for 18-20 minutes, or until golden.
  • Cool: Let the flapjacks cool in the tin for 10 minutes before marking pieces with a knife. Allow them to cool completely, then cut into squares.
  • Store: Store in an airtight container for up to 5 days.

Notes

  • For a richer chocolate flavor, you can use dark chocolate chips.
  • Make sure to let the flapjacks cool completely before cutting, as they may break if you cut them too soon.
  • Feel free to add a handful of nuts or dried fruit for extra texture.
