  • Author: Mary
  • Total Time: 35 minutes
  • Yield: 2 sandwiches 1x

Description

Crunchy Chicken Romesco Sandwich is the perfect balance of crispy, savory, and tangy! A crunchy panko-coated chicken breast, paired with a flavorful Romesco mayo sauce, fresh lettuce, and juicy tomato, all sandwiched between toasted bread. This sandwich is both satisfying and bursting with flavor—perfect for lunch or a quick dinner.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • ¼ cup mayonnaise
  • 2 tablespoons Romesco sauce
  • 4 slices of bread
  • Lettuce and tomato, for topping

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the breadcrumb mixture: In a shallow dish, combine panko breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper.
  3. Coat the chicken breasts: Dip each chicken breast into the breadcrumb mixture, ensuring they are evenly coated on all sides.
  4. Bake the chicken: Place the coated chicken breasts on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the breadcrumbs are golden and crispy.
  5. Make the Romesco mayo: In a small bowl, mix the mayonnaise and Romesco sauce until smooth and well combined.
  6. Toast the bread: While the chicken is baking, toast the bread slices to your desired level of crispiness.
  7. Assemble the sandwich: Spread the Romesco mayonnaise on each slice of toasted bread.
  8. Build the sandwich: Place a crispy chicken breast on one slice of bread. Top with lettuce, tomato, and the remaining slice of bread.
  9. Serve and enjoy!

Notes

  • You can make your own Romesco sauce at home using roasted red peppers, almonds, garlic, olive oil, and vinegar, or use store-bought for convenience.
  • For extra flavor, add some sliced avocado, pickles, or a slice of cheese to elevate the sandwich.
  • If you prefer, you can pan-fry the chicken instead of baking it for a quicker result.
  • The chicken can be served alone with the Romesco mayo on the side as a light dish.
