For the Honey Dijon Sauce:
- 2 tbsp Dijon mustard
- 2 tbsp salted butter
- 2 tbsp honey
For the Sandwiches:
- 4 large croissants
- 8 slices cheese (such as Gouda, baby Swiss, cheddar, or your favorite cheese)
- 1/2 pound deli-sliced ham
- 8 slices cooked bacon
For the Eggs:
- 5 large eggs
- Splash of milk
- Salt and pepper to taste
- 1 tbsp butter
- Fresh chives for garnish (optional)

Make the Honey Dijon Sauce:
- In a small saucepan, melt the butter over medium heat. Once melted, add the Dijon mustard and honey. Stir to combine and bring the mixture to a simmer for 2-3 minutes, then remove from heat and set aside.

Prepare the Croissants:
- Slice the croissants in half horizontally.
- Optional: You can lightly toast the croissant halves in a toaster or on a skillet for a crispy texture.

Cook the Eggs:
- In a bowl, whisk together the eggs, a splash of milk, and salt and pepper to taste.
- In a skillet, melt 1 tablespoon of butter over medium heat. Pour in the egg mixture and scramble the eggs, stirring gently until they are cooked to your desired consistency. Remove from heat.

Assemble the Sandwiches:
- Place a slice of cheese on the bottom half of each croissant.
- Add a generous portion of scrambled eggs on top of the cheese.
- Layer on 2 slices of deli-sliced ham and 2 slices of cooked bacon.
- Drizzle the honey Dijon sauce over the bacon and ham.
- Top with another slice of cheese and place the top half of the croissant on each sandwich.
