- 2 lbs (900g) baby potatoes, halved
- 4 tbsp unsalted butter, melted

- 1 tsp dried thyme or rosemary (optional)

Prepare the Potatoes:
Wash and halve the baby potatoes. Place them in a large bowl. -

Toss the Potatoes:
Pour the garlic butter mixture over the halved potatoes. Toss until the potatoes are evenly coated with the seasoning. -
Bake the Potatoes:
Arrange the coated potatoes in a single layer on the prepared baking sheet, cut side down for extra crispiness. Bake for 30-35 minutes, flipping the potatoes halfway through, until they are golden brown and crispy on the outside. -
Garnish and Serve:
Once the potatoes are crispy and cooked through, remove them from the oven. Garnish with fresh chopped parsley and serve immediately.

- For extra crispiness, you can broil the potatoes for 2-3 minutes at the end of baking, watching closely to avoid burning.
