  • 1 lb boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach (fresh)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 oz fettuccine pasta
  • Fresh basil, for garnish

Instructions

  • Season the chicken breasts with salt and pepper on both sides.
  • In a large skillet, heat olive oil over medium-high heat.
  • Add the chicken breasts and cook for 6-7 minutes on each side, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic and halved cherry tomatoes. Cook for 2-3 minutes until the tomatoes begin to soften.
  • Add the spinach to the skillet and cook for another 2-3 minutes, until the spinach wilts.
  • Stir in the heavy cream and grated Parmesan cheese. Bring the mixture to a simmer, stirring occasionally, until the sauce thickens slightly.
  • Meanwhile, cook the fettuccine pasta according to the package instructions. Drain and set aside.
  • Slice the cooked chicken into thin strips and add it back to the skillet with the sauce. Stir to combine.
  • Serve the creamy Tuscan chicken sauce over the cooked fettuccine pasta.
  • Garnish with fresh basil and serve.

Notes

  • If you prefer a thicker sauce, let it simmer a little longer before adding the chicken back.
  • You can substitute the spinach with kale or arugula for a slightly different flavor.
  • For a lighter version, you can use half-and-half or whole milk instead of heavy cream.
  • You can also add a squeeze of lemon juice for a bit of extra brightness.
