- 4 boneless, skinless chicken breasts
- 4 oz cream cheese, softened
- 1/2 cup spinach, chopped (fresh or frozen)
- 1/4 cup sun-dried tomatoes, chopped (optional)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tbsp garlic, minced
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup chicken broth (or white wine for extra flavor)
- 1 tbsp butter (optional, for extra richness)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the softened cream cheese, chopped spinach, sun-dried tomatoes (if using), shredded mozzarella, grated Parmesan, minced garlic, oregano, salt, and pepper. Mix well to create the stuffing mixture.
- Using a sharp knife, create a pocket in each chicken breast by slicing through the thickest part of the breast, making sure not to cut all the way through.
- Stuff each chicken breast with the cream cheese mixture, ensuring it’s evenly distributed. Secure the opening with toothpicks if necessary.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear them for 3-4 minutes on each side, until golden brown.
- Remove the chicken breasts from the skillet and set aside. Add the chicken broth (or white wine) to the skillet, scraping up any browned bits from the bottom. Stir in the butter for extra richness, if desired.
- Return the chicken breasts to the skillet and spoon some of the sauce over the top. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Serve the chicken breasts with the creamy sauce from the skillet. Garnish with fresh herbs or extra grated Parmesan, if desired.
Notes
- For a lighter version, you can use reduced-fat cream cheese and skip the butter in the sauce.
- If you don’t have sun-dried tomatoes, try adding a few tablespoons of chopped artichoke hearts or roasted red peppers for extra flavor.
