- 2 tablespoons heavy cream
For the French Toast:
- 4 slices thick-cut bread (preferably brioche or challah)
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1 tablespoon butter (for cooking)
For the Topping:
- 1 cup fresh strawberries, sliced
- 2 tablespoons granulated sugar
- Maple syrup (for drizzling)
Instructions
For the cheesecake filling:
- In a medium mixing bowl, beat the softened cream cheese with powdered sugar, vanilla extract, and heavy cream until smooth and creamy.
- Set the filling aside.
For the French toast:
- In a shallow bowl, whisk together the eggs, milk, cinnamon, and vanilla extract.
- Heat a skillet or griddle over medium heat and melt the butter to coat the surface.
- Dip each slice of bread into the egg mixture, making sure both sides are coated.
- Place the coated bread on the skillet and cook for 2-3 minutes per side, until golden brown and crispy. Remove from the pan and set aside.
Assemble the stuffed French toast:
- Spread a generous amount of the cheesecake filling on one slice of the French toast.
- Top with a few fresh strawberry slices, then place another slice of French toast on top, creating a sandwich.
- Repeat the process for the second serving.
For the topping:
- In a small bowl, toss the sliced strawberries with granulated sugar and let them sit for a few minutes to macerate and release their juices.
- Serve the stuffed French toast with the macerated strawberries on top, and drizzle with maple syrup for extra sweetness.
