Ingredients

Scale

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons heavy cream

For the French Toast:

  • 4 slices thick-cut bread (preferably brioche or challah)
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon butter (for cooking)

For the Topping:

  • 1 cup fresh strawberries, sliced
  • 2 tablespoons granulated sugar
  • Maple syrup (for drizzling)

Instructions

For the cheesecake filling:

  1. In a medium mixing bowl, beat the softened cream cheese with powdered sugar, vanilla extract, and heavy cream until smooth and creamy.
  2. Set the filling aside.

For the French toast:

  1. In a shallow bowl, whisk together the eggs, milk, cinnamon, and vanilla extract.
  2. Heat a skillet or griddle over medium heat and melt the butter to coat the surface.
  3. Dip each slice of bread into the egg mixture, making sure both sides are coated.
  4. Place the coated bread on the skillet and cook for 2-3 minutes per side, until golden brown and crispy. Remove from the pan and set aside.

Assemble the stuffed French toast:

  1. Spread a generous amount of the cheesecake filling on one slice of the French toast.
  2. Top with a few fresh strawberry slices, then place another slice of French toast on top, creating a sandwich.
  3. Repeat the process for the second serving.

For the topping:

  1. In a small bowl, toss the sliced strawberries with granulated sugar and let them sit for a few minutes to macerate and release their juices.
  2. Serve the stuffed French toast with the macerated strawberries on top, and drizzle with maple syrup for extra sweetness.
