Description
Creamy Rice Pudding is a comforting, rich dessert made with tender rice, creamy milk, and a hint of cinnamon. It’s a classic, easy-to-make treat that can be enjoyed warm or cold, with the option to add raisins for extra sweetness.
Ingredients
Scale
- 3½ cups milk, plus more if needed
- 2 tablespoons unsalted butter
- ⅓ cup granulated sugar
- ½ cup uncooked white rice
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- 1½ teaspoons pure vanilla extract
- ½ cup raisins (optional)
- 3 tablespoons heavy cream
Instructions
- In a medium saucepan, combine the milk, butter, sugar, rice, and salt. Bring to a boil over medium heat, stirring occasionally.
- Once it begins to boil, reduce the heat to low and simmer gently, uncovered, for 30-35 minutes, stirring frequently to prevent the rice from sticking.
- When the rice is tender and the pudding has thickened, add the ground cinnamon and vanilla extract, stirring to combine.
- If you are using raisins, stir them into the pudding at this point.
- For extra creaminess, stir in the heavy cream and cook for an additional 5 minutes.
- Remove from heat and let the pudding cool slightly. If the pudding becomes too thick, you can add a little more milk to reach your desired consistency.
- Serve warm or chilled, and enjoy!
Notes
- This rice pudding thickens as it cools, so if you prefer a thinner consistency, add more milk when serving.
- You can make this pudding ahead of time and store it in the refrigerator for up to 3 days.
- For a variation, you can add a sprinkle of nutmeg or top with toasted coconut.
