Description

This Creamy Italian Chicken Pasta is a rich and satisfying dish featuring tender chicken, fresh spinach, and juicy cherry tomatoes in a luscious Parmesan cream sauce. Paired with fettuccine, it’s the perfect weeknight dinner for a cozy and indulgent meal.


Ingredients

  • 8 oz fettuccine pasta
  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  • Cook fettuccine pasta according to package instructions. Drain and set aside.
  • Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat and cook chicken until no longer pink in the center. Remove chicken from skillet and set aside.
  • In the same skillet, add garlic and cherry tomatoes. Cook until tomatoes start to soften.
  • Stir in spinach and cook until wilted. Add heavy cream and Parmesan cheese, stirring until cheese is melted.
  • Slice cooked chicken and add back to the skillet. Stir in cooked fettuccine pasta until well coated with the sauce.
  • Serve hot, garnished with fresh basil.

Notes

 

  • For a lighter version, you can substitute the heavy cream with a mixture of milk and Greek yogurt.
  • You can add mushrooms or bell peppers for additional flavor and texture.
  • Top with extra Parmesan cheese for a cheesier version of the dish.
