- 8 oz fettuccine pasta
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook fettuccine pasta according to package instructions. Drain and set aside.
- Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat and cook chicken until no longer pink in the center. Remove chicken from skillet and set aside.
- In the same skillet, add garlic and cherry tomatoes. Cook until tomatoes start to soften.
- Stir in spinach and cook until wilted. Add heavy cream and Parmesan cheese, stirring until cheese is melted.
- Slice cooked chicken and add back to the skillet. Stir in cooked fettuccine pasta until well coated with the sauce.
- Serve hot, garnished with fresh basil.
Notes
- For a lighter version, you can substitute the heavy cream with a mixture of milk and Greek yogurt.
- You can add mushrooms or bell peppers for additional flavor and texture.
- Top with extra Parmesan cheese for a cheesier version of the dish.
