  • 2 chicken breasts, boneless and skinless, cut into bite-sized pieces
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 3 cups broccoli florets (fresh or frozen)
  • 1 package (9 oz) refrigerated cheese tortellini
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp dried Italian seasoning
  • 1 tbsp butter
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  • Heat the olive oil in a large skillet over medium heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook until the chicken is browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set it aside.
  • In the same skillet, add the broccoli florets. If using frozen broccoli, cook for 3-4 minutes; if fresh, sauté for about 5 minutes until tender. Remove the broccoli and set aside with the chicken.
  • In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  • Add the heavy cream, chicken broth, and Parmesan cheese to the skillet. Stir in the Italian seasoning and bring the sauce to a simmer. Let it cook for 3-4 minutes, stirring occasionally, until the sauce has thickened slightly.
  • Meanwhile, cook the tortellini according to package instructions, then drain.
  • Add the cooked tortellini, chicken, and broccoli to the skillet with the creamy sauce. Stir gently to combine and heat through for 2-3 minutes.
  • Garnish with fresh parsley before serving.

Notes

  • For a lighter version, substitute the heavy cream with half-and-half or milk.
  • Add more grated Parmesan cheese for an extra cheesy flavor.
  • You can substitute the chicken with shrimp or turkey if preferred.
