Description
This Creamy Cauliflower Mash is a delicious and healthier alternative to mashed potatoes. With a rich, creamy texture and savory flavor, it’s the perfect side dish for any meal. The cauliflower is blended with butter, cream, and cream cheese to create a velvety smooth dish, with optional Parmesan and fresh chives for added richness.
Ingredients
Scale
- 1 large head cauliflower, cut into florets
- 2 tablespoons butter (or ghee for a richer taste)
- ¼ cup heavy cream (or milk for a lighter option)
- 2 tablespoons cream cheese (for extra creaminess)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
- ¼ cup grated Parmesan cheese (optional, for extra richness)
- 1 tablespoon chopped fresh chives (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 10-12 minutes, or until the cauliflower is tender.
- Drain the cauliflower and return it to the pot.
- Add the butter, heavy cream (or milk), and cream cheese to the cauliflower. Use an immersion blender or a potato masher to mash until smooth and creamy.
- Stir in the garlic powder, onion powder, salt, and black pepper. Taste and adjust the seasonings as needed.
- If using, fold in the grated Parmesan cheese for extra flavor and richness.
- Transfer the mash to a serving dish and garnish with chopped fresh chives.
- Serve warm and enjoy!
Notes
- For a dairy-free version, substitute the butter and cream cheese with dairy-free alternatives like coconut oil and cashew cream.
- You can also add roasted garlic for an additional layer of flavor.
- For a lighter version, use milk instead of heavy cream.
