Creamy Cauliflower Mash

  • Author: Mary
  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

This Creamy Cauliflower Mash is a delicious and healthier alternative to mashed potatoes. With a rich, creamy texture and savory flavor, it’s the perfect side dish for any meal. The cauliflower is blended with butter, cream, and cream cheese to create a velvety smooth dish, with optional Parmesan and fresh chives for added richness.

Ingredients

Scale
  • 1 large head cauliflower, cut into florets
  • 2 tablespoons butter (or ghee for a richer taste)
  • ¼ cup heavy cream (or milk for a lighter option)
  • 2 tablespoons cream cheese (for extra creaminess)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese (optional, for extra richness)
  • 1 tablespoon chopped fresh chives (for garnish)

Instructions

  • Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 10-12 minutes, or until the cauliflower is tender.
  • Drain the cauliflower and return it to the pot.
  • Add the butter, heavy cream (or milk), and cream cheese to the cauliflower. Use an immersion blender or a potato masher to mash until smooth and creamy.
  • Stir in the garlic powder, onion powder, salt, and black pepper. Taste and adjust the seasonings as needed.
  • If using, fold in the grated Parmesan cheese for extra flavor and richness.
  • Transfer the mash to a serving dish and garnish with chopped fresh chives.
  • Serve warm and enjoy!

Notes

  • For a dairy-free version, substitute the butter and cream cheese with dairy-free alternatives like coconut oil and cashew cream.
  • You can also add roasted garlic for an additional layer of flavor.
  • For a lighter version, use milk instead of heavy cream.
