  • Author: Mary

Description

Creamy burrata with fresh pesto and roasted cherry tomatoes is an elegant yet simple appetizer. The rich, creamy burrata pairs perfectly with vibrant pesto and sweet, caramelized tomatoes, creating a harmonious blend of flavors. It’s topped with fresh basil and drizzled with balsamic glaze for an extra touch of sweetness. Perfect for entertaining or a light starter before dinner.

Ingredients

Scale
  • 1 pint cherry or grape tomatoes, halved
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 (8-ounce) burrata cheese ball
  • 1/2 cup basil pesto (store-bought or homemade)
  • Fresh basil leaves, for garnish
  • Balsamic glaze, for drizzling (optional)
  • Crostini or crusty bread, for serving

Instructions

  • Roast the tomatoes: Preheat your oven to 400°F (200°C). Place the halved cherry tomatoes on a baking sheet. Drizzle with olive oil, then sprinkle with salt, black pepper, and garlic powder. Toss to coat evenly. Roast for 15-20 minutes, or until the tomatoes are soft, slightly caramelized, and bursting. Remove from the oven and set aside.
  • Assemble the dish: Place the burrata cheese ball in the center of a serving platter. Spoon the fresh pesto generously around the burrata, creating a vibrant base. Top with the roasted cherry tomatoes, allowing their juices to mix with the pesto.
  • Garnish and serve: Drizzle the dish with balsamic glaze for added sweetness (optional). Garnish with fresh basil leaves for a pop of color. Serve immediately with toasted crostini or slices of crusty bread for dipping.

Notes

  • For a homemade pesto, blend fresh basil, garlic, pine nuts, Parmesan, and olive oil until smooth.
  • If you prefer a sweeter flavor, use a high-quality balsamic vinegar for drizzling.
  • This dish is best enjoyed immediately after assembling to maintain the freshness of the ingredients.
