Instructions

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  • Beat in the flour mixture alternately with the buttermilk, mixing just until incorporated.
  • Fold in the coconut and walnuts (if using). Pour the batter evenly into the prepared cake pans.
  • Bake in the preheated oven for 30-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
