- 2 cups sliced fresh strawberries
- Whipped cream, for serving
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold butter to the flour mixture and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
- Stir in the heavy cream and vanilla extract until the dough comes together.
- Turn the dough out onto a lightly floured surface and knead gently until it forms a smooth ball.
- Pat the dough into a 1-inch thick round and cut out circles using a biscuit cutter.
- Place the dough circles onto the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
- Let the shortcakes cool slightly before assembling.
- To assemble, slice the shortcakes in half horizontally, top with sliced strawberries, whipped cream, and then the top half of the shortcake.

- For best results, use very cold butter when making the dough to achieve a flaky texture.
