Description
Ina Garten’s classic meatloaf is a flavorful, comforting dish made with ground chuck, sautéed onions, and savory seasonings. Topped with a sweet and tangy ketchup glaze, it’s the perfect dinner for any occasion. This easy-to-follow recipe yields a moist and delicious meatloaf.
Ingredients
Scale
- 1 tablespoon olive oil
- 3 cups finely chopped yellow onions (about 3 onions)
- 1 teaspoon chopped fresh thyme
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 3 tablespoons Worcestershire sauce
- 1/3 cup canned chicken stock or broth
- 1 tablespoon tomato paste
- 2 1/2 pounds ground chuck (81% lean)
- 1/2 cup plain dry bread crumbs
- 2 extra-large eggs, beaten
- 1/2 cup ketchup
Instructions
- Preheat the oven to 325°F (165°C). Line a sheet pan with parchment paper.
- Heat olive oil in a medium skillet over medium-low heat. Add the onions, thyme, salt, and pepper. Stir occasionally until the onions are translucent, about 8-10 minutes.
- Remove the skillet from heat and stir in Worcestershire sauce, chicken stock, and tomato paste. Set aside to cool slightly.
- In a large bowl, lightly mix together the ground chuck, onion mixture, bread crumbs, and eggs using a fork. Be careful not to over-mix, as this can make the meatloaf tough.
- Shape the mixture into a loaf on the prepared sheet pan. Spread ketchup evenly on top of the meatloaf.
- Bake for 1 to 1 1/4 hours, or until the internal temperature reaches 160°F (71°C).
- Serve hot and enjoy!
Notes
- Make sure not to over-mix the meatloaf to keep it tender.
- The meatloaf can be prepared a day ahead and stored in the fridge before baking.
- You can also add a little bit of barbecue sauce instead of ketchup for a different flavor.
