  • 6 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 2 cloves of garlic, minced
  • 8 cups beef broth
  • 1/2 cup dry white wine
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • 1 baguette, sliced and toasted
  • 1 1/2 cups grated Gruyère cheese

Instructions

  • Melt butter in a large pot over medium heat. Add onions and cook, stirring frequently, until caramelized, about 40 minutes.
  • Add minced garlic and cook for another minute until fragrant.
  • Pour in white wine, scraping any browned bits off the bottom of the pot.
  • Add beef broth, bay leaves, and thyme. Season with salt and freshly ground black pepper.
  • Bring to a boil, then reduce heat and let the soup simmer for 30 minutes to meld the flavors.
  • Preheat the oven broiler.
  • Ladle soup into oven-safe bowls. Top each bowl with a slice of toasted baguette and a generous amount of grated Gruyère cheese.
  • Broil the bowls until the cheese is bubbly and golden brown, about 3-5 minutes.

Notes

  • For a richer flavor, you can use a combination of beef and chicken broth.
  • If you prefer a lighter version, you can skip the broiling step and just add the cheese to the soup while it’s still hot.
