- 6 large yellow onions, thinly sliced
- 4 tablespoons unsalted butter
- 2 cloves of garlic, minced
- 8 cups beef broth
- 1/2 cup dry white wine
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper to taste
- 1 baguette, sliced and toasted
- 1 1/2 cups grated Gruyère cheese
Instructions
- Melt butter in a large pot over medium heat. Add onions and cook, stirring frequently, until caramelized, about 40 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Pour in white wine, scraping any browned bits off the bottom of the pot.
- Add beef broth, bay leaves, and thyme. Season with salt and freshly ground black pepper.
- Bring to a boil, then reduce heat and let the soup simmer for 30 minutes to meld the flavors.
- Preheat the oven broiler.
- Ladle soup into oven-safe bowls. Top each bowl with a slice of toasted baguette and a generous amount of grated Gruyère cheese.
- Broil the bowls until the cheese is bubbly and golden brown, about 3-5 minutes.
Notes
- For a richer flavor, you can use a combination of beef and chicken broth.
- If you prefer a lighter version, you can skip the broiling step and just add the cheese to the soup while it’s still hot.
