- 2 tablespoons olive oil
- 1 medium onion (diced)
- 2 celery stalks (sliced)
- 2 medium carrots (peeled and sliced)
- 3 garlic cloves (minced)
- 8 cups chicken stock
- 2 cups cooked, shredded chicken
- 1 cup egg noodles (or pasta of choice)
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper (to taste)
- Fresh parsley (chopped, for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced celery, and sliced carrots. Sauté for about 5 minutes, or until the vegetables begin to soften.
- Add the minced garlic and cook for another minute until fragrant.
- Pour in the chicken stock, and bring the mixture to a boil.
- Once boiling, add the shredded chicken, egg noodles (or your pasta of choice), dried thyme, and dried parsley. Stir to combine.
- Reduce the heat to a simmer, and cook for about 10-12 minutes, or until the noodles are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh chopped parsley.
Notes
- You can use leftover rotisserie chicken for quicker preparation.
- For a heartier soup, add more vegetables such as parsnips or zucchini.
- If you prefer a gluten-free version, substitute the egg noodles with gluten-free pasta.
