  • 2 tablespoons olive oil
  • 1 medium onion (diced)
  • 2 celery stalks (sliced)
  • 2 medium carrots (peeled and sliced)
  • 3 garlic cloves (minced)
  • 8 cups chicken stock
  • 2 cups cooked, shredded chicken
  • 1 cup egg noodles (or pasta of choice)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper (to taste)
  • Fresh parsley (chopped, for garnish)

Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced celery, and sliced carrots. Sauté for about 5 minutes, or until the vegetables begin to soften.
  • Add the minced garlic and cook for another minute until fragrant.
  • Pour in the chicken stock, and bring the mixture to a boil.
  • Once boiling, add the shredded chicken, egg noodles (or your pasta of choice), dried thyme, and dried parsley. Stir to combine.
  • Reduce the heat to a simmer, and cook for about 10-12 minutes, or until the noodles are tender.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh chopped parsley.

Notes

  • You can use leftover rotisserie chicken for quicker preparation.
  • For a heartier soup, add more vegetables such as parsnips or zucchini.
  • If you prefer a gluten-free version, substitute the egg noodles with gluten-free pasta.
