    • 3 and 1/2 cups all-purpose flour, spooned and leveled

    • 1 teaspoon baking soda

    • 3/4 teaspoon kosher salt

    • 1 and 1/2 teaspoons cream of tartar

    For rolling:

    • 1/3 cup granulated sugar

    • 1 and 1/2 tablespoons cinnamon


Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • Start by making the filling: In a small bowl, combine the softened butter, brown sugar, and cinnamon. Set aside.

  • For the dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

  • In another bowl, whisk together the flour, baking soda, kosher salt, and cream of tartar. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  • Roll the dough into a large rectangle (about 1/4 inch thick) on a floured surface. Spread the filling mixture evenly over the dough.

  • Roll the dough up tightly, lengthwise, and then slice it into individual cookies, about 1/2 inch thick.

  • For the rolling: Mix the granulated sugar and cinnamon together in a shallow bowl. Roll each cookie in the cinnamon-sugar mixture and place it on the prepared baking sheet.

  • Bake for 10-12 minutes, or until the edges are golden brown. Let the cookies cool slightly before serving.
