Description

Cinnamon Bread is soft, moist, and filled with a sweet cinnamon swirl throughout. Topped with a sugary cinnamon topping and optionally glazed with a simple icing, this bread makes for the perfect breakfast or snack. It’s an easy, comforting treat your family will love!

Ingredients

Scale

Swirl Filling:

  • ⅓ cup (76g) packed brown sugar, light or dark
  • 2 teaspoons ground cinnamon

Bread:

  • 2 cups (250g) all-purpose flour, lightly spooned and leveled
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ⅓ cup (73g) vegetable or canola oil
  • ¾ cup (150g) granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • ½ cup (115g) sour cream or plain yogurt (not nonfat)
  • ½ cup (114g) milk (not nonfat)

Cinnamon Topping:

  • 2 tablespoons granulated sugar
  • ¼ teaspoon ground cinnamon

Glaze (Optional):

  • ⅓ cup (45g) powdered sugar
  • 1 teaspoon milk (plus more if needed)
  • A couple drops of vanilla extract

Instructions

  • Prepare the swirl filling:
    • In a small bowl, mix together the brown sugar and cinnamon. Set aside.
  • Make the bread batter:
    • Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    • In a large bowl, whisk together the oil and granulated sugar. Add the egg and vanilla extract, and whisk until smooth.
    • Add the sour cream (or yogurt) and milk, and whisk until combined.
    • Gradually add the dry ingredients to the wet ingredients, stirring until just combined (do not overmix).
  • Assemble the bread:
    • Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon swirl filling evenly over the batter.
    • Add the remaining batter and top with the rest of the swirl filling. Use a knife or skewer to gently swirl the cinnamon filling into the batter, creating a marbled effect.
  • Add the topping:
    • In a small bowl, combine the granulated sugar and cinnamon for the topping. Sprinkle this mixture evenly over the top of the batter.
  • Bake:
    • Bake the bread for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with foil and continue baking.
    • Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
  • Make the glaze (optional):
    • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled bread before serving.

Notes

  • For best results, use full-fat sour cream or yogurt.
  • This bread is perfect for breakfast, a snack, or even as a dessert.
  • If you prefer, you can omit the glaze for a less sweet version, or enjoy it with a cup of coffee or tea.
