Description

These irresistible Chocolate Marshmallow Swirl Cookies feature a rich chocolate dough wrapped around a gooey marshmallow center, creating the perfect combination of soft, chewy, and gooey textures. With the sweetness of marshmallows and the richness of semisweet chocolate chips, these cookies are a crowd-pleaser for any occasion—whether for dessert, a holiday treat, or just because.

Ingredients

Scale
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 21/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup baking cocoa
  • 2 cups semisweet chocolate chips
  • 11/2 cups miniature marshmallows

Instructions

  • Cream butter and sugars: In a large bowl, beat together the softened butter, sugar, and brown sugar until light and fluffy.
  • Add eggs and vanilla: Beat in the eggs, one at a time, followed by the vanilla extract.
  • Mix dry ingredients: In a separate bowl, combine the flour, baking soda, and salt. Gradually add this dry mixture to the creamed butter and sugar mixture, mixing until just combined.
  • Divide the dough: Split the dough into two equal portions.
  • Add cocoa to one portion: Mix the cocoa into one portion of the dough until fully incorporated.
  • Stir in chocolate chips: Add the semisweet chocolate chips to the plain dough and stir well.
  • Shape the cookies: Using a tablespoon, scoop out portions of both the chocolate and plain doughs. Roll each into a ball, then press a marshmallow into the center of each dough ball. Reshape the dough around the marshmallow so it’s completely enclosed.
  • Prepare to bake: Place the dough balls about 2 inches apart on ungreased baking sheets.
  • Bake the cookies: Bake in a preheated oven at 350°F (175°C) for 8-10 minutes, or until set. The marshmallows should be slightly puffed and gooey.
  • Cool the cookies: Allow the cookies to cool for 5 minutes on the baking sheets before transferring them to wire racks to cool completely.

Notes

  • Be sure not to overbake the cookies, as they continue to cook slightly on the baking sheet after you remove them from the oven.
  • For an extra indulgent treat, you can drizzle melted chocolate over the cooled cookies or sprinkle them with a little sea salt for contrast.
  • The marshmallows may spread a bit while baking, so be sure to give the dough balls plenty of space on the sheet.
