- 1–1/2 cups miniature marshmallows
Instructions
- Cream butter and sugars: In a large bowl, beat together the softened butter, sugar, and brown sugar until light and fluffy.
- Add eggs and vanilla: Beat in the eggs, one at a time, followed by the vanilla extract.
- Mix dry ingredients: In a separate bowl, combine the flour, baking soda, and salt. Gradually add this dry mixture to the creamed butter and sugar mixture, mixing until just combined.
- Divide the dough: Split the dough into two equal portions.
- Add cocoa to one portion: Mix the cocoa into one portion of the dough until fully incorporated.
- Stir in chocolate chips: Add the semisweet chocolate chips to the plain dough and stir well.
- Shape the cookies: Using a tablespoon, scoop out portions of both the chocolate and plain doughs. Roll each into a ball, then press a marshmallow into the center of each dough ball. Reshape the dough around the marshmallow so it’s completely enclosed.
- Prepare to bake: Place the dough balls about 2 inches apart on ungreased baking sheets.
- Bake the cookies: Bake in a preheated oven at 350°F (175°C) for 8-10 minutes, or until set. The marshmallows should be slightly puffed and gooey.
- Cool the cookies: Allow the cookies to cool for 5 minutes on the baking sheets before transferring them to wire racks to cool completely.
