These Chocolate Covered Strawberry Cookies are the perfect treat for your sweetheart! A soft, chewy strawberry-flavored cookie base is enhanced with melted chocolate chips or candy melts, and finished off with sprinkles for that extra touch of love. Easy to make and absolutely delicious.

- 1 package strawberry cake mix
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 eggs
- Chocolate chips or chocolate candy melts (for dipping)
- Sprinkles (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
- In a large bowl, combine the strawberry cake mix, vegetable oil, vanilla extract, and eggs. Mix until a dough forms. The dough should be soft but not too sticky.
- Scoop spoonfuls of dough (about 1 tablespoon each) and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are slightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies are cooling, melt the chocolate chips or candy melts in a microwave-safe bowl. Heat in 20-second intervals, stirring between each, until fully melted and smooth.
- Once the cookies have cooled, dip the tops into the melted chocolate and place them back onto the wire rack. If desired, sprinkle with festive sprinkles before the chocolate sets.
- Allow the chocolate to harden completely before serving.
Notes
- You can use milk, dark, or white chocolate depending on your preference.
- If you prefer, you can also drizzle the melted chocolate over the cookies instead of dipping them for a different look.
- Add a pinch of sea salt on top of the chocolate for a sweet-salty flavor twist.
