A decadent combination of rich brownies, fresh strawberries, and a smooth chocolate ganache topping. These Chocolate Covered Strawberry Brownies are a perfect dessert for any occasion.
Ingredients

For the Brownies:

1 cup (2 sticks) unsalted butter

2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 cup unsweetened cocoa powder

1/2 teaspoon salt

1 teaspoon baking powder
For the Topping:

1 pint fresh strawberries, hulled and halved

1 cup semi-sweet chocolate chips

1/2 cup heavy cream

Instructions

Preheat the oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.

In a large mixing bowl, melt the butter. Once melted, add granulated sugar and stir until well combined.

Add eggs, one at a time, and stir in the vanilla extract.

In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder. Slowly add the dry ingredients into the wet mixture, stirring until smooth.

Pour the brownie batter into the prepared baking pan and spread evenly.

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the brownies cool completely in the pan.

For the topping, place chocolate chips and heavy cream in a microwave-safe bowl. Microwave in 20-second intervals, stirring in between, until the chocolate is melted and smooth.

Once the brownies have cooled, pour the chocolate ganache over the top, spreading evenly with a spatula.

Arrange the halved strawberries on top of the chocolate ganache.

Refrigerate for 1 hour to set the ganache, then slice and serve.
Notes

For extra flavor, you can add a splash of vanilla extract to the ganache mixture.

If you prefer, you can use dark chocolate chips for a richer ganache.
