Description

A decadent combination of rich brownies, fresh strawberries, and a smooth chocolate ganache topping. These Chocolate Covered Strawberry Brownies are a perfect dessert for any occasion.

  • For the Brownies:

    • 1 cup (2 sticks) unsalted butter

    • 2 cups granulated sugar

    • 4 large eggs

    • 1 teaspoon vanilla extract

    • 1 cup all-purpose flour

    • 1 cup unsweetened cocoa powder

    • 1/2 teaspoon salt

    • 1 teaspoon baking powder

    For the Topping:

    • 1 pint fresh strawberries, hulled and halved

    • 1 cup semi-sweet chocolate chips

    • 1/2 cup heavy cream


Instructions

  • Preheat the oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.

  • In a large mixing bowl, melt the butter. Once melted, add granulated sugar and stir until well combined.

  • Add eggs, one at a time, and stir in the vanilla extract.

  • In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder. Slowly add the dry ingredients into the wet mixture, stirring until smooth.

  • Pour the brownie batter into the prepared baking pan and spread evenly.

  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the brownies cool completely in the pan.

  • For the topping, place chocolate chips and heavy cream in a microwave-safe bowl. Microwave in 20-second intervals, stirring in between, until the chocolate is melted and smooth.

  • Once the brownies have cooled, pour the chocolate ganache over the top, spreading evenly with a spatula.

  • Arrange the halved strawberries on top of the chocolate ganache.

  • Refrigerate for 1 hour to set the ganache, then slice and serve.

Notes

  • For extra flavor, you can add a splash of vanilla extract to the ganache mixture.

  • If you prefer, you can use dark chocolate chips for a richer ganache.

  • The brownies can be stored in an airtight container for up to 3 days.
