Description
A decadent treat combining two homemade chocolate chip cookies with creamy vanilla ice cream. These delicious ice cream sandwiches are perfect for a summer dessert or any special occasion.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semisweet chocolate chips
- 1.5 quarts vanilla ice cream
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla.
- Combine the flour, baking soda, and salt; stir into the cookie dough.
- Mix in the chocolate chips.
- Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven.
- Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Once cookies are completely cooled, scoop a generous amount of vanilla ice cream onto the flat side of a cookie.
- Top with another cookie, flat side down, and gently press together.
- Repeat with remaining cookies and ice cream.
- Individually wrap each sandwich in plastic wrap and freeze until firm, at least 2 hours.
Notes
- Be sure to let the cookies cool completely before assembling the sandwiches to avoid the ice cream melting too quickly.
- These ice cream sandwiches can be stored in the freezer for up to 2 weeks.
- You can substitute the vanilla ice cream with any flavor of your choice!
