Chocolate Chip Cookie Ice Cream Sandwiches

Description

A decadent treat combining two homemade chocolate chip cookies with creamy vanilla ice cream. These delicious ice cream sandwiches are perfect for a summer dessert or any special occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips
  • 1.5 quarts vanilla ice cream

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • Combine the flour, baking soda, and salt; stir into the cookie dough.
  • Mix in the chocolate chips.
  • Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven.
  • Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Once cookies are completely cooled, scoop a generous amount of vanilla ice cream onto the flat side of a cookie.
  • Top with another cookie, flat side down, and gently press together.
  • Repeat with remaining cookies and ice cream.
  • Individually wrap each sandwich in plastic wrap and freeze until firm, at least 2 hours.

Notes

  • Be sure to let the cookies cool completely before assembling the sandwiches to avoid the ice cream melting too quickly.
  • These ice cream sandwiches can be stored in the freezer for up to 2 weeks.
  • You can substitute the vanilla ice cream with any flavor of your choice!
