Instructions
- In a large bowl, combine olive oil, minced garlic, ginger paste, soy sauce, yellow curry powder, turmeric, ground coriander, chili powder, coconut milk, salt, black pepper, brown sugar, and red pepper flakes. Mix until the ingredients are well combined.
- Add the chicken pieces to the bowl, ensuring the chicken is evenly coated with the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
- Preheat your grill or a grill pan over medium heat.
- Skewer the marinated chicken pieces onto metal or wooden skewers, making sure they are spaced out evenly.
- Grill the chicken for about 4-5 minutes per side, or until the chicken is fully cooked through and has nice grill marks.
