Chicken Meatloaf Recipe

  • Author: Mary
  • Total Time: 1 hour
  • Yield: 4-6 servings 1x

Description

This Chicken Meatloaf is a lighter and flavorful alternative to traditional beef meatloaf. With ground chicken, savory Parmesan cheese, fresh herbs, and a sweet and tangy glaze, this dish is a crowd-pleaser. It’s perfect for a family dinner or meal prep, and the glaze adds a delicious finishing touch!

Ingredients

Scale

For the Chicken Meatloaf:

  • 1 pound ground chicken
  • 1 1/4 cups breadcrumbs
  • 1/2 cup finely chopped onion
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1/2 cup milk
  • 2 large eggs
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce

For the Glaze:

  • 3/4 cup ketchup
  • 3 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce

Instructions

  • Preheat the oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  • In a large bowl, combine the ground chicken, breadcrumbs, chopped onion, Parmesan cheese, parsley, salt, garlic powder, black pepper, milk, eggs, tomato paste, and Worcestershire sauce. Mix everything together until fully combined.
  • Transfer the meat mixture into the prepared loaf pan and shape it into a loaf.
  • In a small bowl, whisk together the ketchup, brown sugar, and Worcestershire sauce for the glaze. Spread the glaze evenly over the top of the meatloaf.
  • Bake for 45-50 minutes or until the meatloaf is cooked through (internal temperature should reach 165°F or 74°C).
  • Let the meatloaf rest for 5-10 minutes before slicing. Serve with your favorite sides and enjoy!

Notes

  • If you don’t have a loaf pan, you can also bake this meatloaf on a baking sheet, shaping it into a loaf.
  • You can adjust the glaze to your preference, adding more sugar for a sweeter flavor or more Worcestershire sauce for an extra savory kick.
  • Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
