- 2 cups cooked shredded chicken (use leftover rotisserie chicken or quickly boil and shred chicken breasts)
- 1 avocado, diced
- 1/4 cup ranch dressing
- 1/4 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
- Salt and pepper, to taste
- 4 large flour tortillas (or gluten-free tortillas for a gluten-free version)
- 1 cup shredded lettuce
- 1/2 cup shredded cheddar cheese (or dairy-free cheese for a dairy-free version)
- Sour cream and salsa (optional, for serving or drizzling on top)
Instructions
- In a large bowl, combine the shredded chicken, diced avocado, ranch dressing, diced tomatoes, diced red onion, cilantro, and lime juice. Stir until the ingredients are well mixed. Season with salt and pepper to taste.
- Warm the flour tortillas in a skillet or microwave for a few seconds until soft and pliable.
- On each tortilla, layer 1/4 of the shredded lettuce in the center. Spoon a generous portion of the chicken and avocado mixture on top of the lettuce.
- Sprinkle the shredded cheddar cheese over the chicken mixture.
- Fold in the sides of the tortilla and then roll it up tightly, securing the filling inside.
- Optional: If desired, serve with a dollop of sour cream and a drizzle of salsa on top.
- Slice each burrito in half and serve immediately.
Notes
- For extra flavor, you can grill the burrito for a crispy exterior by placing it in a hot skillet for 1-2 minutes per side.
- You can customize the burrito by adding other ingredients like sliced jalapeños, corn, or black beans.
- For a dairy-free version, use a dairy-free ranch dressing and omit the cheese or use a dairy-free cheese alternative.
- For a spicy kick, add hot sauce or diced jalapeños to the filling.
