Instructions
- Cook the Ground Beef: Heat olive oil in a large skillet or sauté pan over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant, about 3 minutes. Add the ground beef, breaking it up with a spoon, and cook until browned. Drain any excess fat if necessary.
- Prepare the Casserole Mixture: Stir in the beef broth, cream of mushroom soup, diced tomatoes, and uncooked rice. Season with salt, pepper, and oregano (if using). Bring the mixture to a simmer, then cover the pan with a lid and reduce the heat to low. Let it cook for about 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
