- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, finely chopped
- 4 cloves garlic, minced
- 1/2 cup cream cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Fresh parsley, chopped for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, melt the butter and add the minced garlic and chopped mushrooms. Cook until the mushrooms are soft and the garlic is fragrant, about 5 minutes.
- Remove the skillet from the heat and stir in the cream cheese, shredded mozzarella, dried thyme, and a pinch of salt and pepper.
- Cut a pocket into each chicken breast, being careful not to cut all the way through.
- Stuff the mushroom and cheese mixture evenly into each chicken breast.
- Secure the openings with toothpicks.
- Season the outside of the chicken breasts with salt, pepper, and paprika.
- Heat the olive oil in the same skillet over medium-high heat and sear each chicken breast until golden, about 3 minutes per side.
- Transfer the skillet to the preheated oven and bake for 20 minutes, or until the chicken is cooked through.
Notes
- Be careful not to overstuff the chicken breasts to avoid the filling spilling out while cooking.
- You can substitute mozzarella with cheddar or Parmesan for a different flavor.
- Let the chicken rest for 5 minutes after baking before serving to keep the juices inside.
