  • 4 boneless, skinless chicken breasts
  • 1 cup mushrooms, finely chopped
  • 4 cloves garlic, minced
  • 1/2 cup cream cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Fresh parsley, chopped for garnish

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a skillet over medium heat, melt the butter and add the minced garlic and chopped mushrooms. Cook until the mushrooms are soft and the garlic is fragrant, about 5 minutes.
  • Remove the skillet from the heat and stir in the cream cheese, shredded mozzarella, dried thyme, and a pinch of salt and pepper.
  • Cut a pocket into each chicken breast, being careful not to cut all the way through.
  • Stuff the mushroom and cheese mixture evenly into each chicken breast.
  • Secure the openings with toothpicks.
  • Season the outside of the chicken breasts with salt, pepper, and paprika.
  • Heat the olive oil in the same skillet over medium-high heat and sear each chicken breast until golden, about 3 minutes per side.
  • Transfer the skillet to the preheated oven and bake for 20 minutes, or until the chicken is cooked through.

Notes

  • Be careful not to overstuff the chicken breasts to avoid the filling spilling out while cooking.
  • You can substitute mozzarella with cheddar or Parmesan for a different flavor.
  • Let the chicken rest for 5 minutes after baking before serving to keep the juices inside.
