  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 8 oz baby bella mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup cream cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  • Preheat oven to 400°F (200°C).
  • In a skillet, heat olive oil over medium heat. Add mushrooms and garlic, sauté until mushrooms are golden brown.
  • Remove skillet from heat and stir in Parmesan, mozzarella, and cream cheese until well combined.
  • Cut a pocket into each chicken breast and stuff with the mushroom mixture. Season with salt and pepper.
  • In the same skillet, sear chicken breasts until golden brown on both sides.
  • Transfer skillet to the oven and bake for 20-25 minutes, or until chicken is cooked through.
  • Garnish with chopped parsley before serving.

Notes

  • Make sure to cut a deep pocket in the chicken breasts to hold all of the creamy mushroom filling.
  • You can use a mix of other mushrooms for a different flavor profile.
  • If you don’t have an oven-safe skillet, transfer the chicken to a baking dish before baking.
