- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 8 oz baby bella mushrooms, sliced
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1/4 cup cream cheese
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat. Add mushrooms and garlic, sauté until mushrooms are golden brown.
- Remove skillet from heat and stir in Parmesan, mozzarella, and cream cheese until well combined.
- Cut a pocket into each chicken breast and stuff with the mushroom mixture. Season with salt and pepper.
- In the same skillet, sear chicken breasts until golden brown on both sides.
- Transfer skillet to the oven and bake for 20-25 minutes, or until chicken is cooked through.
- Garnish with chopped parsley before serving.
Notes
- Make sure to cut a deep pocket in the chicken breasts to hold all of the creamy mushroom filling.
- You can use a mix of other mushrooms for a different flavor profile.
- If you don’t have an oven-safe skillet, transfer the chicken to a baking dish before baking.
