- 1 head of cauliflower, cut into florets
- 1 cup of shredded cheddar cheese
- 1/2 cup of breadcrumbs
- 2 eggs
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine cauliflower florets, cheddar cheese, breadcrumbs, eggs, garlic powder, salt, and pepper. Mix until well combined.
- Using your hands, shape the mixture into small bite-sized balls and place them on the prepared baking sheet.
- Lightly spray the cauliflower bites with cooking spray.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
