For the Graham Cracker Crust:

  • 2 1/2 cups Graham Cracker Crumbs
  • 68 Tablespoons Butter (melted)
  • 1/4 cup Brown Sugar
  • 1 large Egg White

For the Cheesecake Filling:

  • 4 (8-ounce) packages Cream Cheese (softened)
  • 1 1/2 cups Sugar
  • 1/4 cup Cake Flour
  • 1/4 teaspoon Salt
  • 2 large Eggs
  • 1 large Egg Yolk
  • 3/4 cup Sour Cream
  • 2 teaspoons Vanilla Extract

For the Toppings:

  • 16 ounces Driscoll’s Strawberries (sliced)
  • 12 ounces Driscoll’s Raspberries

Instructions

  • Prepare the Graham Cracker Crust:
    • Preheat the oven to 325°F (163°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
    • In a bowl, combine the graham cracker crumbs, melted butter, brown sugar, and egg white. Mix until the crumbs are evenly coated.
    • Press the mixture into the bottom of the prepared pan, creating a firm and even layer.
    • Bake for 8-10 minutes or until lightly golden. Remove from the oven and set aside to cool.
  • Prepare the Cheesecake Filling:
    • In a large bowl, beat the softened cream cheese with sugar until smooth and creamy.
    • Add the cake flour and salt, mixing until combined.
    • Beat in the eggs and egg yolk, one at a time, until fully incorporated.
    • Add the sour cream and vanilla extract, and mix until smooth and creamy.
    • Pour the cheesecake filling over the cooled crust.
  • Bake the Cheesecake Bars:
    • Bake for 50-55 minutes, or until the center is set but slightly jiggly. The edges should be lightly golden.
    • Let the bars cool to room temperature, then refrigerate for at least 4 hours or overnight for best results.
  • Prepare the Toppings:
    • Once the cheesecake is chilled, top with fresh sliced strawberries and raspberries just before serving.
