For the Graham Cracker Crust:
- 2 1/2 cups Graham Cracker Crumbs
- 6–8 Tablespoons Butter (melted)
- 1/4 cup Brown Sugar
- 1 large Egg White
For the Cheesecake Filling:
- 4 (8-ounce) packages Cream Cheese (softened)
- 1 1/2 cups Sugar
- 1/4 cup Cake Flour
- 1/4 teaspoon Salt
- 2 large Eggs
- 1 large Egg Yolk
- 3/4 cup Sour Cream
- 2 teaspoons Vanilla Extract
For the Toppings:
- 16 ounces Driscoll’s Strawberries (sliced)
- 12 ounces Driscoll’s Raspberries
Instructions
- Prepare the Graham Cracker Crust:
- Preheat the oven to 325°F (163°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
- In a bowl, combine the graham cracker crumbs, melted butter, brown sugar, and egg white. Mix until the crumbs are evenly coated.
- Press the mixture into the bottom of the prepared pan, creating a firm and even layer.
- Bake for 8-10 minutes or until lightly golden. Remove from the oven and set aside to cool.
- Prepare the Cheesecake Filling:
- In a large bowl, beat the softened cream cheese with sugar until smooth and creamy.
- Add the cake flour and salt, mixing until combined.
- Beat in the eggs and egg yolk, one at a time, until fully incorporated.
- Add the sour cream and vanilla extract, and mix until smooth and creamy.
- Pour the cheesecake filling over the cooled crust.
- Bake the Cheesecake Bars:
- Bake for 50-55 minutes, or until the center is set but slightly jiggly. The edges should be lightly golden.
- Let the bars cool to room temperature, then refrigerate for at least 4 hours or overnight for best results.
- Prepare the Toppings:
- Once the cheesecake is chilled, top with fresh sliced strawberries and raspberries just before serving.
