Description

Warm up with this flavorful and comforting Carrot and Ginger Soup! A perfect balance of sweet carrots and zesty ginger, this soup is pureed to a smooth texture and seasoned with salt and pepper for a deliciously simple meal. Perfect for chilly days or as a light, healthy appetizer.


Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 lb carrots, peeled and chopped
  • 1 tbsp fresh ginger, grated
  • 4 cups vegetable broth
  • Salt and pepper, to taste

Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion and cook until softened, about 5 minutes.
  • Stir in the chopped carrots and grated ginger, cooking for another 5 minutes.
  • Pour in the vegetable broth and bring to a simmer. Cook for 20-25 minutes, until the carrots are tender.
  • Use an immersion blender to puree the soup until smooth.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!

Notes

  • For extra creaminess, you can stir in a bit of coconut milk or heavy cream after pureeing.
  • If you prefer a thinner soup, add more vegetable broth to adjust the consistency.
