- 1 onion, chopped
- 1 lb carrots, peeled and chopped

Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the chopped carrots and grated ginger, cooking for another 5 minutes.
- Pour in the vegetable broth and bring to a simmer. Cook for 20-25 minutes, until the carrots are tender.
- Use an immersion blender to puree the soup until smooth.
- Season with salt and pepper to taste.
